- Preheat oven to 325 degrees. Line a baking sheet with parchment paper.
- In a large mixing bowl stir together rolled oats, almonds, and mini chocolate chips.
- In a microwave safe container, stir together peanut butter, honey, brown sugar, and vanilla until completely combined. Microwave on high 20-30 seconds until mixture is runny.
- Pour peanut butter mixture over oat mixture and stir together until there are no loose oats left.
- Spread oats out on parchment-lined baking sheet.
- Bake for 18-20 minutes. Let cool completely and then store in an airtight container. Δ Δ
